Recipe – Burst Bubble



An exercise in disruption, this drink is meant to replicate the taste of bubble gum, without the sticky sweetness. Bubblegum is an intricate, artificial flavor. It uses a complex ester combination that mimics fruit, mint and cinnamon/clove to create a distinct taste. But we use real mint and strawberry for our version. Bubblegum is mankind moving taste past nature; this drink lets nature catch up.

Pair with a record by the Ramones.


(Note: Feel free to scale ingredient costs up and down to fit your budget. These are the brands/types we used.)

2 oz. Mezcal (Peolton de la Muerte)
1 oz. strawberry shrub
1/2 oz. banana liqueur (99 Bananas)
1/2 oz. Campari
1/4 oz. Kronan Swedish Punsch
2 dashes Angostura Bitters
Mint Leaves

Muddle 3 mint leaves in a shaker with the bitters and add the other ingredients. Short shake and strain into a highball glass filled with crushed ice. Garnish with a mint sprig.


Mint on the nose. The palate is fruity, but Campari keeps the sweetness in check. The mezcal adds a wisp of smoke to the finish.
