The birth of this drink was an interest in using fortified wine as a spirit base. Death & Co. has done this to much success (http://www.foodandwine.com/recipes/flor-de-jerez-cocktails-2011). After pairing it with orange, the Andalusian influence of the drink became apparent.
A pirate cocktail through and through, pair this with The Goonies and a duel.
(Note: Feel free to scale ingredient costs up and down to fit your budget. These are the brands/types we used.)
1 oz. medium-dry sherry (we use Fino)
3/4 oz. amber rum (Appleton Estate)
3/4 oz orange juice (non-concentrate)
1/2 oz. triple sec (Cointreau)
1/2 teaspoon allspice dram (St. Elizabeth)
Shake all ingredients over ice and double strain into a coupe glass.
The sherry and allspice dram play together to create a nuttiness in the drink. Triple sec adds another layer of orange. And what’s a buccaneer drink without rum?
